Château Yquem

The Château d'Yquem is a wine participating in the influence of France throughout the world. Let's start with its terroir. Beyond the diversity of the 104 hectares cultivated, there are mainly gravelly ridges on clay substrate, the first favoring heat and the second being rich in water.

Then there are two varieties: Semillon, which dominates, for its richness and volume, Sauvignon for its smoothness and its flavors.

Then comes Botrytis cinerea, fungus and roasting concentrates the grape sugar and flavorings. Its action is favored by morning mists that in the fall, fall on the Sauternes from Ciron and Garonne.

This is when the harvest time which are in many passages, grain by grain, to keep only the most beautiful and best rotten. In the winery, the movements are precise and scholars, with a pressing gently, new barrels and a particularly long aging, more than four months.
