Domaine de Chevalier
Originally, there is the small estate of Chivaley with a few acres of vineyards and a lot of forest. Its rise, under the domain name of Chevalier, dates from the second half of the 19th, under the impulse of two brothers, Arnaud and Jean Ricard, and their descendants who carry the domain at the top of the appellation.Since 1983, it is the Bernard family who presides over the destiny of the place, one of the peculiarities of which is to be surrounded by a forest whose high trees isolate the surrounding vineyards, thus playing a leading role. In summer, trees enclose heat and promote the greenhouse effect, and in the winter, they accentuate the frost. The vineyard covers 37 hectares for the reds with a lot of cabernet sauvignon, a little merlot then traces of cabernet franc and petit verdot. White wine, perhaps even more famous than red, is produced from 5 hectares planted in Sauvignon and Sémillon, the former accounting for 70% of the surface. The elaboration of the wines is placed under the sign of a sentence highlighted on their website: man is only a revealer, the terroir dominates everything. Here is a beautiful declaration of humility which informs us about a most simple procedure, the effacement of man before the earth and the vine.
